Crockpot Attempt Part 2

So I was somewhat successful cooking in my crockpot a couple weeks ago.

It was good, but Chef Justin had to tamper with the seasonings, because it was missing something and of course, he came up with an amazing solution within a couple minutes of throwing things in the sauce. Oy vey, how does it come so naturally to him? He must have a top chef rat up his sleeve, something of this nature:

Hopefully this time I won’t need Justin or his stupid rodent. I’m making coffee-braised pot roast with caramelized onions and unlike most crockpot recipes, where you just dump everything in,  this one actually had me using the STOVE for 5 minutes browning the roast and onions! I felt like a real chef (yes, i know, pathetic!). It smells awesome so far, so I’m crossing my fingers!

See what it looks like after the jump!

And here’s the recipe!

I was thinking I should post a picture of my roast when I’m done, but I think it may end up being incredibly disappointing compared to the photo above, so we’ll see!

Update: It tasted awesome and Justin didn’t need to do anything, besides showing me how to “tent” aluminum foil over the roast! WOoo! Oh and no picture, because although it turned out pretty decent looking, we were too famished, so it was gone in a second! :P
